My parents’ mango tree is so full of fruit so I had to find something to do with it – tropical ice cream without sugar or other nasties. I make variations of this regularly with whatever I have in my cupboard.

Tropical coconut ice cream
6 medium size mangos
6 medium sized bananas
1 small pineapple
juice of 1/2 lemon
400 ml coconut cream (health shops sell tins without any preservatives)
Blend in blender, into ice cream maker and eat!
Makes +/- 1.5 liter. Add one or two bananas for extra sweetness.
